      book review: the new wildcrafted cuisine by pascal baudar Simply a stunning book, the visuals, photos, are just perfection as is the rest of the book. This is not a plant ID book and not a cook book in the sense that that you have ever seen in the past, but a real breakthrough on originality in dining. To celebrate the release of Pascal Baudar’s new book, Wildcrafted Fermentation, this and the next episode are about his earlier works, The New Wildcrafted Cuisine and The Wildcrafting Brewer.       In The New Wildcrafted Cuisine, Pascal talks about a local plant, rabbit tobacco, that he was experimenting many different ways with it, trying to make the food made with it to taste just right, and in the end he discovered that tying it . Wildcrafted soda requires only creativity, and knowledge of edibility, and little sugar or honey, and just a little bit of patience. One can certainly kick off fermentation with a tiny pinch of yeast like this, or simply wait for the native yeasts and bacteria to take hold. Once the mixture starts to bubble it is a mere hours to bottle, and another few hours to rebuild carbonation.

      My guest for this episode is Pascal Baudar, author of The New Wildcrafted Cuisine. Pascal is taking foraged food and elevating them to more than just something to eat, and creating rich meals from the common, such as wild mustards or acorns, to the uncommon, like lurp sugar or fleas, building on years of experience and hundreds of classes on. Pascal has written three books: The New Wildcrafted Cuisine, The Wildcrafting Brewer and Wildcrafted Fermentation (Feb ). Both published books became Amazon bestsellers in several categories. He is currently working on his 4th book, a bit of an "art" project related to using the wildcrafting discipline to help the environment by focusing on.
